Great anti-inflammatory soup with probiotics.
2 servings
1 tbsp. coconut oil
½ onion chopped
500g (1lb 2oz) organic carrots, chopped
1 tsp. fresh ginger root peeled and chopped
1 tsp. miso paste
400ml (14floz) just boiled water
Sea salt flakes
1tbsp. favourite nuts and seeds
Heat oil in large pan, add onion and cook for 10 mins until soft. Add carrots, ginger and miso paste and stir through for another minute before adding water.
Bring to the boil, reduce and simmer for 10 mins or until carrots are tender.
Blend until smooth with processor or hand blender.
Season as desire and serve in a bowl with a handful of your favourite nuts and seeds.
