These gluten free, vegan pancakes are super simple and make the perfect breakfast treat.

 

1 chia egg (1 tbsp chia seeds with 3 tbsp water)

1 tsp cinnamon

150g sprouted buckwheat powder

2 tbsp chocolate protein powder or cacao powder

2 tsp Monk Fruit sweetener / Erythritol

300ml unsweetened milk of choice (i use coconut)

Coconut oil for greasing

 

Method:

 

Add 1 tbsp of chia seeds into large mixing bowl and cover with 3 tbsp of water. leave to soak for 6 minutes until egg like mixture

Pre-heat pan for pancakes

Add cinnamon, protein / cacao powder, flour and milk to chia egg and mix well

Melt a bit of coconut oil int he pan then make pancakes as usual.

Top as you desire!

These would work too was waffles if you are lucky enough to have a waffle maker or crepes if you have a crepe maker.
